Basic Cooking

 

 

On completion of this course your domestic helper will receive a certificate and will be able to master the following:

  • Operate kitchen equipment and appliances
  • Safely manage and store food hygienically (Including Freezing and NOT Re-Freezing anything)
  • Quantify ingredients properly using measuring cups, spoons and scales
  • Follow recipes and learn to modify it to your families dietary needs (allergies, intolerances etc)
  • Cook a variety of breakfasts to start your day in a healthy way
  • Create great salads with complementary dressings
  • Implement side dishes that complement main meals
  • Prepare wonderful desserts to impress
  • How to do weekly menus for the family and prepare shopping lists with ease
  • Understand dietary requirements such as low fat alternatives and vegetarian options for all recipes
  • How to prepare dishes from various cuisines (Chinese, Malay, Middle Eastern, Italian, Western and German)

Week 1:

Basic Kitchen Skills

  • We emphasize the importance of cleanliness and food hygiene
  • Measuring ingredients correctly
  • Using kitchen utensils properly
  • Prepare ingredients using clever kitchen time saving tips
  • All methods of cooking the 'right' way
  • The essentials of food storage in Singapore
  • Oven charts and using, fan force, grill and oven instructions
  • Potato and leek soup
  • Dip - hummus, supplied recipes for avocado and tuna, and crudites
  • Pasta Bolognaise
  • Marinades made easy - Supplied recipes for Smokey BBQ, Sticky Soy, Japanese, Indian and Satay marinade
  • BBQed marinated lemon pesto chicken skewers

Week 2:

Breakfast Foods and Sides

  • Breakfast foods: How to cook eggs perfectly (scrambled and poached), chicken ham, cheese, tomato & Basil omelette
  • Delicious, healthy low fat bircher muesli
  • Fluffy banana pancakes
  • Roasted rosemary and garlic new potatoes
  • Sticky baked pumpkin with feta & sesame seeds
  • Principles of salad making: Using nuts, fruit and cheese to turn a boring salad into a fabulous salad
  • Honey mustard vinaigrette dressing
  • Chicken & vegetable mac 'n' cheese

Week 3:

One Pot Winners and Desserts

  • Thai Green Fish Curry - how to make homemade curry paste to create the most wonderfully tasting curry
  • Baked Moroccan Chicken - a fantastic meal with a middle eastern twist that your guest will be impressed with - served with couscous
  • Beef Cottage Pie - a family favourite in every home
  • BBQ style Lemon & Thyme marinade & Chinese marinade Fish Skewers - kebab style tender pieces of snapper marinated to grilled to perfection
  • Crunchy Banana Nut Rolls - bananas, sprinkled with roasted hazelnuts and wrapped in light puff pastry - the diversity of pastry using sweet & savoury recipes

Week 4:

Main Meals Fare

  • Roast Chicken with Vegetables - how to roast a chicken to crisp, juicy perfection, surrounded by veggies
  • Orange Chicken Cashew Stir Fry - a healthy dish loaded with veggies with a lovely orange accent
  • Schnitzel - homemade chicken nuggets or fishie chippies. Great for fussy Kids!
  • Chocolate Marble Cake - a classic childhood memory of swirls of vanilla & chocolate
  • Granny's Apple Crumble - a family heirloom handed down by generations
  • Menu planning- weekly menu planning & how to shop for the family. Getting organised in the kitchen.
  • The importance of a balanced meal
